Chef Paul Mancebo found his passion for cooking while skipping math class to leaf through the cookbook section of the library at Washington State University. This eventually led him to Hyde Park, NY, where he enrolled at the Culinary Institute of America—graduating in 2007 with an even greater appreciation for other cultures and global cuisine.
After internships at both Thomas Keller’s Bouchon Bistro in Napa Valley and the Romantik Hotel Spielweg in Obermunstertal, Germany, he spent years on the line in New York under Olivier Muller at db Bistro Moderne and for Shea Gallante at Ciano.
As chef and owner of Agate Restaurant, Chef Paul continues the legacy of delicious dining brought to the island by Susanna Turner. The menu showcases our local farms with beautiful produce, seafood, and proteins found in abundance in the Northwest. You’ll experience New American cuisine prepared with Modernist Techniques and influenced by flavors from around the world.
When Chef Paul isn’t in the kitchen, you’ll find him out exploring the island with his wife and two daughters, playing hockey, or drinking a Negroni.
Came back to Bainbridge to celebrate our 26th anniversary. Agate was the perfect place to do so. Atmosphere was warm and relaxing. Staff was engaged and helpful with food and drink choices. Food was wonderful and desert finished it nicely.
Great restaurant on Bainbridge Island. Awesome service, tasty cocktails, and delicious entrées. Our waiter, was wonderful. We will be back!
Took the ferry over to Bainbridge to eat at Mora (ice cream) and Agate. Both highly recommended! Mussels were perfectly done is a light and flavorful curry broth, use the spoon to finish it all! The elk burger was perfectly cooked with crispy shoestring fries. Certainly a great place for PNW forward fare.
Came here to meet a friend after a long time and this place was awesome to relax and enjoy amazing food. Service was awesome, they took care of us recommending food and drinks for the uncertain and answering questions about the food.
Great food in a very comfortable, elegantly cozy space. Owner Is very hands-on, and it is obvious that the community loves the restaurant (lots of regulars). Try the Bainbridge Whiskeys. They are really good.
